at character dining restaurants the characters come around to the tables every few minutes so yes you'll be able to see the characters no matter what time your reservation is for.
for example last time i went we had reservations for 9pm and crystal palace and the characters made their way around the restaurant 3 full times in the hour we were there.
same with chef mickey's. we got there at about 7pm and we saw all of the characters at least 3 times in the 1.5hrs we were there.
don't worry if you haven't seen a certain character yet and you are almost ready to leave just tell your waitress and she will bring the character to you.How long Disney Characters stay in the restaurants?
If you're eating at a restaurant with characters they'll come around to your table at least a couple of times while you're there. At Crystal Palace they make their way around the restaurant a few times, parade around with the kids or anyone who cares to join in, they take a small break, and return once again. They make sure to visit each table a few times in case they missed you while you were up plating your food from the buffet. They come in during all dinner times. If you have a reservation at 7pm and the restaurant closes at park close then you will see them right before it closes. They make sure everyone see them. I always chose our dinner times at 6
